Pungent red currant, cherry and blood orange aromas, along with suggestions of lavender and chalky minerals. Chewy and focused on the palate, offering red berry and bitter cherry flavors that are supported by a spine of juicy acidity.
It pairs well with seafood, fish, chicken, duck, pork, beef, and a variety of cheeses. It holds up to spice, and is flexible enough to handle complex meals like my duck confit hash cake.
